Garlic scapes can be chopped up and added
raw to any salad or cold dish for a fresh light
garlic flavor.  You can also use them in place
of the garlic clove in your favorite recipes.  
Here are a couple of easy recipes Grumpy
Glenn uses all the time.

Scape Mashed Potatoes
2 1/2 lbs. potatoes, peeled and cut into 1" pieces.
2 Tablespoons butter
1-2 Tbsp, olive oil
1/4 cup finely chopped scapes
1/4 cup hot milk (or more)

Cook potatoes until very tender. Drain and return to
pot. Over medium high heat, melt butter with olive oil
in a small skillet. Add scapes and saute about 5
minutes. Add to potatoes and mash. Gradually add
milk while stirring. Season with salt and pepper.
Easy Garlic Scape Pesto
1/2 lb. scapes (chopped into 1"
sections)
1 c. olive oil
2 c. grated parmesan cheese

In a blender, combine the scapes and
olive oil. Pour mixture into bowl and
blend the cheese in by hand. Serve
over your favorite pasta or spread on
bread or crackers.
Easy Garlic Chicken

1 1/2 pounds skinless, boneless chicken breast
halves
1/4 cup butter
6 cloves crushed garlic
2 cups seasoned dry bread crumbs

Preheat oven to 375 degrees F (190 degrees C).
In a small saucepan melt butter/margarine with
garlic. Dip chicken pieces in butter/garlic sauce,
letting extra drip off, then coat completely with bread
crumbs. Place coated chicken in a lightly greased
9x13 inch baking dish. Combine any leftover
butter/garlic sauce with bread crumbs and spoon
mixture over chicken pieces. Bake in the preheated
oven for 45 minutes to 1 hour.

Roasted Garlic

Preheat oven to 350°F. Cut top 1/4 inch off
4 heads of garlic to expose cloves. Place
garlic in small baking dish. Add oil and
sprinkle with salt and pepper; toss to coat.
Turn garlic cut side up. Cover tightly with
aluminum foil. Bake until garlic skins are
golden brown and cloves are tender, about
50—55 minutes. Cool. Squeeze garlic
cloves from skins. Spread on crackers, or
French bread. Mix in mashed potatoes.  
Use in recipes.  Enjoy!
Easy Pesto

3 large garlic cloves
1/2 cup pine nuts or walnuts
2/3 cup Parmesan cheese
1 teaspoon salt
1/2 teaspoon black pepper
3 cups loosely packed fresh basil  (fresh spinach
and basil mixture can be substituted)
2/3 cup extra-virgin olive oil

With food processor running, drop in garlic and
finely chop. Stop motor and add nuts, cheese,
salt, pepper, and basil,/spinach.  Process until
finely chopped. With motor running, add oil,
blending until incorporated. Serve over hot
pasta, chicken or fish.
Roasted Garlic Scapes

Take the scapes and put them in a
(kosher or sea salt works best but any
will do). Put the loaded and covered
pan in a hot (425 °F) oven for 30 to 45
minutes or until they are beginning to
turn brown. serve as a side or main
dish. Tastes like roasted garlic but
creamier.
